Spring Bear French Dip

Absolutely delicious and easy to make. This recipe is the driving force behind my bear hunts from now on. The roast is cooked from frozen so it’s super easy if you forget to defrost anything the night before. 

Prep Time: 5 Minutes

Cooking Time: 1.5 Hours

Makes 6 Servings

Ingredients:

1 black bear roast

1 cup beef broth

½ cup soy sauce

½ cup water

½ onion

3 cloves garlic

6 Swiss cheese slices

Mayonnaise 

6 Buns


Instructions

  1. Place seasoned roast, soy sauce, broth, and water in roast pan. Cover and put in an oven preheated at 250 degrees. Cook for 90 minutes from frozen. 

  2. Check internal temperature, remove roast from pan, let rest.

  3. In a stove pot, add olive oil, onions, and garlic, cook over medium heat until onions are translucent. Add trimmings and liquid from roast pan. Stir and let simmer.

  4. Shave roast into thin slices, add to the pot.

  5. Cut buns in half, add mayonnaise to the bottom bun, using tongs, take sliced meat and onions from the pot, add to the sandwich. Top with swiss cheese, serve.
