French Onion Bear Noodle Soup

A mashup of Taiwanese Noodle and Classic French Onion Soup, this dish uses tender bear pieces and smooth onion flavors to contrast with sharp cheddar cheese and green onions to form a mouthwatering and filling soup.

Prep Time: 10 Minutes

Cooking Time: 20 Minutes

Makes 6 Servings

Ingredients:

1 pound bear meat

1 large white onion

2 tablespoons olive oil

2 tablespoons butter

3 cloves garlic

3 cups beef broth

3 cups water

2 tablespoons soy sauce

½ teaspoon worcestershire sauce 

2 packages ramen or chow mein noodles

2 cups shredded cheddar cheese

2 green onions

Optional: Chili Peppers

Instructions

  1. Cut the bear into 1 inch cubes, add to the pot with chopped garlic, water, and beef broth. Cook on medium high, covered, until boiling, reduce to simmer.

  2. As broth is coming to a boil, chop onion into thin slices, add to a separate pot with olive oil and butter. Cook over medium heat, covered, stirring occasionally, until onions are reduced and translucent. Add onions to broth when completed. Broth and onions should be reduced to simmering at this point.

  3. In a separate pot, cook ramen or chow mein noodles, season boiling water with salt before adding noodles.

  4. Add cooked noodles to a bowl, add broth, top with cheddar cheese and green onion, serve.
