BBQ Wild Hog and Cabbage

This simple dish uses a sweet tomato-based BBQ style sauce and sharp cheddar cheese that pairs perfectly with the incredible flavors of ground wild hog. Cabbage is the perfect base for dishes that typically would use a grain or pasta. 

Prep Time: 10 Minutes

Cooking Time: 20 Minutes

Makes 6 Servings

Ingredients:

1 pound ground wild pork

½ can crushed tomatoes

½ white onion 

2 teaspoons chili powder

1 teaspoon garlic powder

½ cabbage head (about 2lbs)

2 tablespoons vinegar

2 tablespoons brown sugar

1 tablespoon Worcestershire sauce

2 teaspoons mustard

Green onion and cheddar cheese for topping

Instructions

  1. In a large pot, add olive oil and ground pork, breaking up pork as it browns. Finely dice onion. 

  2. As pork is browning, add onion, chili, garlic powder, and salt to ground beef. Cook over medium heat until onions are soft.

  3. Chop cabbage while pork and onions are cooking, then add ¼ cup of water and cabbage, stir to combine. Simmer and cover with lid as cabbage wilts, stirring occasionally.

  4. Add the tomato sauce, vinegar, brown sugar, Worcestershire sauce, and mustard. Stir to combine and let simmer a few more minutes without the lid.

  5. Top pork and cabbage with cheddar, cover with lid until cheese has melted. Serve and top with green onion.
