Venison Lettuce Wraps with Peanut Satay Sauce

A delicious venison recipe that is perfect for the summer months. The Peanut satay sauce adds a sweet kick of spice while the lettuce wrap gives a nice crunch to a delicious blend of vegetables and ground venison.

Makes 8 Lettuce Wraps
Ingredients:
1 Pound Ground Venison
Pre-Made Coleslaw or Cabbage
½ Red Pepper
½ White Onion
Green Onion
1 Garlic Clove
Iceberg or Romaine Lettuce Head
For Peanut Satay:
1/2 Cup of Warm Peanut Butter
1/4 Cup Soy Sauce
1/4 Cup Garlic Chili Sauce
1/4 Cup Lemon Juice
Whisk all ingredients in a large bowl, add half of the sauce to venison when cooking, and remaining sauce to each lettuce wrap.
Instructions
Dice vegetables and whisk together satay ingredients.
Cook venison in a non-stick pan, adding satay sauce once browned. Set aside venison once cooked.
Cook pepper, garlic, and onion in pan, adding cabbage or coleslaw mix when onions become translucent.
Add venison, vegetables, and satay sauce to lettuce wrap, top with green onion.
